Beefsteak Mushroom (Fistulina Hepatica)

Beefsteak mushroom is a fleshy bracket fungus which is native to Europe. When cut open it resembles fresh red meat with veins running through it, and it also exudes a ‘blood-like’ red liquid. However, it doesn’t actually taste like meat; it has has a sour, but never-the-less, pleasing lemony zest, that can be marinated overnight in red wine and cooked like a tender loin.

Beefsteak is usually found growing from mature Oak trees in mid-summer time. Our unique strain was isolated from an ancient woodland in East Yorkshire. It prefers growing on wider logs over 20 cm (8″) in diameter, so we recommend using a minimum of 60 plugs per 50 cm length. Like Chicken-of-the-woods, Beefsteak needs a larger nutritional base to produce a good fruiting, therefore it is ideal for larger tree stumps and trunk sections cut into rounds.
