Enoki translates from Japanese as the ‘snow cap mushroom’, where it is hugely popular. Enoki mushrooms actually grow all over the world, and are native to Europe. The majority of Enoki mushrooms on sale are grown indoors in low light conditions, which gives them a pale white colour with a long stem and small cap.  Natural log grown Enoki mushrooms look the same as the wild mushrooms – with a much stronger yellow to orange colour, shorter stem and larger cap.

Finely diced fresh Enoki mushrooms enhance many dishes, from soups and gravy, to omelettes.  Thriving in winter temperatures, these beautiful bright yellow mushrooms are sure to brighten up the dark winter months in anybody’s garden.

Description

Season

Bi-annually from October to March, with temperatures fluctuating in the region of 20C to 100C (300F to 500F). Flushes can be up to 3 months apart.

Tree Species

All hardwoods are suitable. Preferred species: Alder, Ash, Birch, Poplar, Willow.

Timber Selection

Enoki can utilise most parts of the tree. Whilst most other mushroom species are not vey productive on narrow limbs and boughs, 10 cm and under, Enoki can produce good mushroom yields on this size of timber.

 

Inoculation Rate: 30 plugs per 50 cm length of timber
Dowel Size: 8 mm x 35 mm
Supplied in a Filter Bag for maximum viability and extended storage
